Ingredients:

  • 3 ripe bananas

  • 200g flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 3 tbsp chia seeds

  • 8 tbsp coconut oil

  • 80g brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 180C.

  2. Grease the loaf pan with coconut oil and set aside.

  3. Add all of the ingredients to a large mixing bowl and blend it all together.

    Tip: Melt the coconut oil and sieve the flour.

  4. Once all the ingredients are thoroughly combined, pour the mixture into the greased loaf pan and putt into the oven.

  5. Bake for 55 - 65 minutes, and let cool for 10 minutes

Enjoy with a cup of tea or coffee!
