1 serving Ingredients:chicken breast - cut into cubes1 tbsp coconut oil1 tsp turmeric 1/2 tsp salt1 slice of bread ( I used wholewheat toast ) - diced1 slice of bacon - cut into cubes lettuce feta cucumber cherry tomatoesbell peppers1/2 avo1 tbsp sunflower seeds1 tbsp pumpkin seedsFor the Chicken:Heat a large pan with coconut oil.Add the chicken, turmeric and salt.Cook with the lid on until no longer pink.For the bacon croutons:Fry bacon until crispy on high heat.Add croutons and reduce heat.Remove once the croutons have brownedFor the seeds: Add seeds to a pan on high heat with no oil.Let them brown for a bout 2 - 5 minutes, stirring in between.Remove from heat once browned.Salad sauce Ingredients:3 tbsp olive oil1 tbsp lemon juice1 tbsp maple syrup1 tsp dijon mustard1/2 tsp garlic powder1 tsp apple cider vinegar salt and pepper to tasteInstructions:Add all the cut up and cooked ingredients to a bowl.Serve with salad sauce and toasted sunflower and pumpkin seeds.Enjoy!
