Ingredients:

  • chicken breast - cut into cubes

  • 1 tbsp coconut oil

  • 1 tsp turmeric

  • 1/2 tsp salt

  • 1 slice of bread ( I used wholewheat toast ) - diced

  • 1 slice of bacon - cut into cubes

  • lettuce

  • feta

  • cucumber

  • cherry tomatoes

  • bell peppers

  • 1/2 avo

  • 1 tbsp sunflower seeds

  • 1 tbsp pumpkin seeds

    For the Chicken:

  1. Heat a large pan with coconut oil.

  2. Add the chicken, turmeric and salt.

  3. Cook with the lid on until no longer pink.

For the bacon croutons:

  1. Fry bacon until crispy on high heat.

  2. Add croutons and reduce heat.

  3. Remove once the croutons have browned

For the seeds:

  1. Add seeds to a pan on high heat with no oil.

  2. Let them brown for a bout 2 - 5 minutes, stirring in between.

  3. Remove from heat once browned.

Salad sauce Ingredients:

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp maple syrup

  • 1 tsp dijon mustard

  • 1/2 tsp garlic powder

  • 1 tsp apple cider vinegar

  • salt and pepper to taste

Instructions:

  1. Add all the cut up and cooked ingredients to a bowl.

  2. Serve with salad sauce and toasted sunflower and pumpkin seeds.
