Ingredients

  • 3 cloves freshly crushed garlic

  • 200g orzo

  • 500ml vegetable stock

  • 1 lemon zest

  • Tomato & basil sauce (jar) 250g

  • 500g raw king prawns

  • 60g parmesan

  • salt

  • pepper

  • olive oil for frying

Instructions:

  1. Preheat your oven to 170’C/350’F

  2. Heat up a frying pan with some olive oil and sauté garlic and orzo on medium heat for 5minutes.

  3. Season with salt and pepper and deglaze the pan with some of the vegetable stock until the liquid is absorb. Add the remaining vegetable stock in bits until the orzo is al dente. Approximately 15minutes.

  4. Add the tomato and basil sauce and stir.

  5. Transfer the orzo to a casserole dish with a lid and place the prawns evenly on top of the orzo, season with salt and pepper.

  6. Place the the dish in the oven ( with the lid on ) for approximately 10 minutes. Take the dish out hallway and see how the prawns are doing ( I like to take them out just before the tail curls in completely).

  7. Garnish with parsley, lemon zest and parmesan.
